Hello there!  This is Katie from The Casual Craftlete blog.  I am super excited to share with you all a yummy Christmas cookie recipe.  These soft and chewy molasses cookies are seriously what the holidays taste like.

Soft and Chewy Molasses Cookies.  Take a bite out of a classic with these soft and chewy molasses cookies.  This recipe is perfect for the holidays!

The cookie dough starts by combining dry ingredients like, flour, baking soda, and warm spices.  Use a whisk to incorporate all of the ingredients and set aside.  How cute are those candy cane measuring spoons?  You can find those festive measuring spoons in the Barn Owl Primitives Christmas goods section here.

Next, cream butter and sugar until light and fluffy.  The key to soft and chewy cookies is to make sure the butter is at room temperature and not melted or too hard.  Mix in eggs and of course molasses.  Then, gradually add the dry ingredients and mix until just combined.  Place a piece of plastic wrap on top of the dough and chill in the refrigerate for at least one hour.  I like to chill my dough over night.

I use a small cookie scoop to portion 1 inch round balls.  Fill a small bowl with granulated sugar and roll the balls to completely coat.  Bake in a 375 degree for 8 to 10  minutes.  The cookies will crack while baking and when cooling.  One tip I have is when you are waiting for the cookies to bake, stick the dough back in the refrigerator because you want to keep the dough chilled.  This recipe does make about 40 cookies so it is a large batch recipe which is great for parties and cookie exchanges.

INGREDIENTS:

  • 4 cups all-purpose flour
  • 4 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon all spice
  • 1 teaspoon salt
  • 1 ½ cups butter, softened to room temperature (not melted!*)
  • 2 cups granulated sugar
  • ½ cup molasses
  • 2 eggs

DIRECTIONS:

 Preheat oven to 375°F.
In a medium bowl, whisk together flour, soda, cinnamon, all spice and salt. Set aside. Using an electric mixer, beat together butter and sugar on medium speed for 2 minutes until light and fluffy, scraping down the sides of bowl.  Mix in the eggs (one at a time) and molasses, and beat on medium-low speed until well combined. Gradually add in the dry ingredient mixture (1/4 cup at a time) and beat until combined. Place a sheet of plastic wrap directly on top of the dough to completely cover it.  Then refrigerate dough for 30-60 minutes or over night, until it is completely chilled. Use a small cookie scoop to portion 1 inch round balls. Fill a small bowl with sugar, and roll each ball in the sugar until it is completely coated. Place on cookie sheet at least 1 inch apart, then bake for about 8-10 minutes, until the cookies begin to slightly crack on top.  Remove from the oven and let cool for a minute or two. Then transfer the cookies to wire racks to cool completely. Serve immediately or store in a sealed container for up to 1 week.
